Apple pie on a crust

Here it is – apple pie, as I have got so many apples in  my garden this year…

Ingredients:

Dough:

  •  300g flour
  • 3/4 cup of sugar
  • unsalted butter
  • 5 yolks
  • 1 teaspoon baking powder
  • 3 spoon double cream

 Filling:

  • 2kg apples
  • 1 teaspoon cinnamon
  • 1 spoon potato flour

Crumble:

  • 200g flour
  • 100g unsalted butter, melted
  • 100g sugar

 

Preparation:

Dough:

Mix flour and baking powder, add sugar, then 5 yolks, 3 spoons of double cream, and cold grated butter.

Mix by hand:))

Best would be to leave the crust in the refrigerator while making the rest of the recipe.

Filling:

Peel the apples. Grate on a coarse mesh. Juice should be drained.  To such drained apples add cinnamon and potato flour. Mix together everything.

Crumble:

Mix together all the crumble ingredients until it holds together.

 

Put half of dough (still crumbly) on baking sheet. Form dough in parts  as it is very crumbly. Using a brush smear protein. Put a layer of apples then layer another half of dough. The last is  crumble on the top.

 

Bake for 45minutes at 150°C.

I did not have a cream but it was absolutly yummy… I should keep it longer in the oven though….
