The day before mix:
1 spoon salt, 1 spoon ground pepper, 1 spoon five spices. Whisk together and marinate the duck in the fridge. You can chose your own spices. I did the crispy duck many times and each time I change the marinate. Each time was delicious…
Next day….
Ingredients
1 duck
½- 1 cucumber
6 spring onions ( I used 1 onion)
hoisin sauce
chinese pancakes ( I used tortilla)
Method
Preheat the oven to 170°C.
Sit the trimmed duck on a rack and roast for 4 hours.
Pancakes – follow the instructions on the packet.
Pour the Hoisin sauce into a bowl.
Cut the cucumber into sticks.
Cut the spring onions lengthways into short strips (I had no spring onions so used just onion).
Transfer the duck to a board.
Fork the meat from the bone and make your own pancakes with spring onions, cucumber strips and hoisin sauce.
Roll up and tuck in….
